like teaching, medicine and social work,
the Peace Corps,
Doctors Without Borders,
Habitat For Humanity and of course
our service men and women overseas.

There are so many ways
others give their lives
in our nation's service,
and for mankind.

(It's especially sweet and fragrant this year.)
Pull the thin white tubes (pistils) from
the honeysuckle flower, and taste the droplet
of nectar hanging from the end.
Now you know why honeybees spend their days
dining on spring's sweet flowers.

WHEN BRICK BUILDINGS
WERE BILLBOARDS

Mural size advertisements
hand painted on the sides of brick buildings . . .
still around today, faded but readable.
They're an endangered, vanishing art form,
popular 100 years ago, in most of our major cities.
They're catalogued and photographed by
Archeology Magazine,
and today referred to as "ghost signs."

As warehouses and old houses are demolished or restored
many of these murals are lost forever.
The most popular brands that created these
early "billboards" were Beechnut Chewing Tobacco,
Uneeda Biscuit, Burma Shave & Domino Sugar.
There are still many mural ads visible today.

looks like an oyster, but has a sweet delicate
flavor ideal for stir fry dishes.
Easily identified in the woods, this prized mushroom
is now cultivated and available in many grocery stores.
(Look for them now at Straub's, Whole Foods and
Sappington Farmers Market.)

NOTHING PRICKLY
ABOUT THIS GREAT MEXICAN SALAD!

There's no salad more characteristic
of classic Mexican cooking than
Ensalada de Nopalitos
(Salad of Prickly Pear Cactus Paddles).

It's easy, really delicious and you can buy
fresh cactus "paddles" at
El Torito Grocery Market
2753 Cherokee Street.

Scrape 6-8 cactus paddles (leaves).
Make sure you remove ALL the outside skin & spines.
Cut into 2" sections, and saute or boil until tender.
Combine with a cup each of cubed red onions,
chopped fresh tomatoes, and 1/2 cup fresh cilantro.
Combine with 3 tbsp. olive oil, the juice of 3 fresh limes
and salt/pepper to taste.
Toss and serve.

JEWEL OF THE CITY

Lafayette Square

These Victorian gems
are being carefully restored
in Lafayette Square,
the oldest neighborhood in St. Louis.

At 5:00 PM, May 27, 1896
the worst tornado to ever touch down
hit the Lafayette Park area of St. Louis
and leveled most of the mansions that
had adorned this stylish neighborhood.
The homes, in and around the Lafayette
Square area and park, were built shortly
thereafter, and today are being carefully restored
to their original splendor,
some 125 years later.

Visit the homes and streets in Lafayette Square
and you will see a grand part of the city,
the way it was in the late 19th century.
(Streets not to miss: Park Avenue, Mississippi,
Lafayette and Rutger.)
