MAKING PASTA SAUCE
(STEP BY STEP)

1.  Pick up 8-cases ripe tomatoes
    (organic, farm fresh) 

2.  Clean and core,
     squeeze juice out

3.  Boil down cut pieces 

4.  Add basil and onion pieces

5.  Cook and stir till soft

6.  Run through tomato strainer,
   to remove seeds and skins

7.  Continue cooking and stir
  till reduced by half

8.  Remove from heat

9.  Salt and sugar to taste

10.  Transfer to sterilized jars

11.  Add clean basil leaf to each jar

12.  Feed helpers with great Sicilian food*

*Grilled spiedini, potato/green bean salad,
eggplant parmigiani, baked beans,
with fresh pasta sauce

(Best to do this outside, on gas burners,
in very large pots, with lots of help)

  5. Buen reportaje y buena receta, yo la salsa de tomate la hago diferente pero con los mismos ingredientes (sofrío primero la cebolla).
