A TIME FOR CROCUS

Crocus blooming everywhere.
A happy sign of Spring.

Also a source of spice,
from the delicate stigmas within.

The world's most costly spice 
(by weight)
comes from the red stigma
of saffron crocus.

Although the stigma from all crocus
is a source of this delicate flavoring,
it is the variety grown in Iran
that accounts for most culinary saffron.

1-pound of dry saffron 
takes the harvest of 70,000 crocus flowers.
