SECRET TO

APRICOT PRESERVES

It's inside the pit.

Cut up ripe apricots.

No need to peel.

Hit each pit

with a hammer.

Inside you'll find

a soft white kernel.

Wrap the kernels in a

"jelly sock" or cheesecloth.

Macerate the cut fruit

overnight with sugar and

a dash of salt.

The next morning,

cook the fruit on medium heat,

add the kernel pouch.

And cook until syrupy.

You won't believe how much 

flavor the kernels add to

your preserves.
